When you give up carbs, Bread & Butter Pudding is probably something you thought you'll never be able to eat again.
Thankfully, this is not the case and here's how to do it!
What you need-
1x Pack of Palena Fresh Dinner Rolls - Find it here.
4x Eggs
1/4 cup Melvia Sweetener - Find it here.
Vanilla (I personally use Vanilla Bean)
500ml Unsweetened Almond Milk
300ml Thickened Cream
50g Butter
1/2 teaspoon of Ground Nutmeg or Cinnamon (and a pinch extra for garnish)
Blueberries (optional)
What To Do-
Pre-heat your oven to 160°C.
Get your self a oven proof dish, preferably at least 3cm deep.
Slice all of your Palena Fresh dinner rolls in half side ways, through the middle (as if you were to cut them to make a burger).
Slap a decently thick layer of butter on each of them and then slice them diagonally to create triangles.
In a separate bowl, whisk together all of your ingredients except for the blueberries and remaining nutmeg until smooth.
Arrange your buttered & triangle'd dinner rolls into your oven dish and pour your custard mixture over the top, completely filling the dish.
If you are using blueberries, sprinkle them all over the top of your pudding and nows the time to sprinkle your extra nutmeg or cinnamon.
Carefully pop this into the oven for about 35 minutes or until it jiggles just a little.
Serve with some double cream and sugar free ice cream.
