Carrot cake is probably my one weekness at a bakery so it was one of the first things I converted when I took on the Keto life.

Our carrot cake is light yet moist, strong in carrot cake flavour and topped with the perfect cream cheesy tang of a buttercream. It's exactly what you want in a carrot cake really.

How to prepare

Defrost in fridge overnight.
Please. Please. Please. Leave this out to come to room temp. The cake has amazing flavour when cold, but you want a carrot cake to be soft and moist AND amazing flavour. This is exactly what happens when it's left to slightly warm its self up outside of the fridge.

Moist and more-ish

This carrot cake is really great and I’m so glad I’ve tried it. Moist, not too sweet and just the right mix of dense and light. The icing is thick and creamy. It froze well. I can taste the quality of the ingredients and could never make this myself to the same standard. Yummo and bravo!
